Sunday Tomato Basil Soup & Grilled Cheese

The soup that tastes like a warm hug — slow-simmered tomatoes with fresh basil, served with a seriously good grilled cheese cut into triangles.

Let's cook

  1. Warm the olive oil in a big pot over medium heat. Add the onion and cook until soft and golden, about 8 minutes.
  2. Stir in the garlic and cook for 1 minute until fragrant.
  3. Add the crushed tomatoes, broth, and a pinch of sugar. Bring to a gentle simmer and let it mellow for 20 minutes.
  4. Take the pot off the heat and stir in the cream and half of the basil. Season with salt and pepper — taste first!
  5. Meanwhile, make the grilled cheese: butter both sides of each bread slice, layer with cheese, and toast in a skillet over medium-low until deep golden on both sides.
  6. Cut the sandwiches into triangles, ladle the soup into bowls, and top with the remaining basil.
