Sunday Tomato Basil Soup & Grilled Cheese
The soup that tastes like a warm hug — slow-simmered tomatoes with fresh basil, served with a seriously good grilled cheese cut into triangles.
Let's cook
- Warm the olive oil in a big pot over medium heat. Add the onion and cook until soft and golden, about 8 minutes.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the crushed tomatoes, broth, and a pinch of sugar. Bring to a gentle simmer and let it mellow for 20 minutes.
- Take the pot off the heat and stir in the cream and half of the basil. Season with salt and pepper — taste first!
- Meanwhile, make the grilled cheese: butter both sides of each bread slice, layer with cheese, and toast in a skillet over medium-low until deep golden on both sides.
- Cut the sandwiches into triangles, ladle the soup into bowls, and top with the remaining basil.
