Molten Dark Chocolate Cake
Individual dark chocolate cakes with a warm, flowing center. Only five ingredients in the batter, and the trick is timing — pull them out when the edges are set but the middle still shimmers.
Let's cook
- Preheat the oven to 425°F (220°C). Butter six 6-oz ramekins well and dust with cocoa, tapping out the excess.
- Melt the chocolate and butter together in short bursts in the microwave (or over a double boiler), stirring until smooth. Let cool slightly.
- Whisk the eggs, yolks, and sugar for about 2 minutes until pale and a little thickened.
- Fold the melted chocolate into the egg mixture, then gently fold in the flour and salt just until no dry streaks remain.
- Divide among the ramekins. Bake 12–14 minutes — the edges should be set and crackly while the centers still look soft and shiny.
- Rest for 1 minute (yes, really), then invert onto plates. Serve immediately with a spoon and no regrets.
