Crispy Sesame Chicken Bowl
Sticky sesame-garlic chicken over rice with crunchy cucumber and scallions. Weeknight-friendly, and the sauce is better than takeout (I checked).
Let's cook
- Toss the chicken with 1 tablespoon of soy sauce and the cornstarch until every piece is coated.
- Heat a large skillet over medium-high heat with a good splash of oil. Cook the chicken in a single layer until crisp and golden, about 5 minutes per side. Set aside.
- In the same pan, add the garlic and ginger and cook for 30 seconds.
- Whisk together the remaining soy sauce, honey, rice vinegar, and sesame oil. Pour it into the hot pan and let it bubble and thicken, about 1 minute.
- Toss the chicken back in to coat it in the sticky sauce.
- Spoon warm rice into bowls, top with the chicken, cucumber coins, scallions, and a shower of toasted sesame seeds.
